TEMPEH SUSHI

Is there any meal tempeh can’t go with? As you can probably tell by now, we certainly don’t think so.
Teriyaki tempeh + sushi = heaven.

Ingredients

1 bamboo roll

2 portions of teriyaki tempeh

100g sushi rice

30ml rice wine vinegar
-
10g of nori sheets
-
1 avocado
-
Wasabi, ginger & soy sauce, to serve
Instructions

Cook the sushi rice, as per instructions, and slice up the avocado into long strips

Mix 200ml of water with the rice wine vinegar in a large bowl

Roll out a sheet of nori (shiny side down) onto the bamboo mat

Dip your hands in the water mixture, then pat handfuls of rice on top of the nori in a 1cm thick layer, leaving the furthest edge from you clear

Add the teriyaki tempeh and avocado in a line across the middle of the rice

Lift the edge of the mat over the rice and begin to roll, ensuring pressure is maintained so the roll sticks together

When you get to the edge without any rice, brush with a little water and keep rolling until the roll is sealed

Slice up and serve with wasabi, ginger & soy sauce!
