This is our ideal summer dish - light, nutritious and super tasty. Our tempeh rashers balance out this sweet, refreshing salad by adding the perfect, salty and meaty bite - life is all about balance, as they say!

Recipe by Better Nature



  • 10ml of extra virgin olive oil

  • 1 pack of our Tempeh Rashers

  • 1 medium-sized apple

  • 1 medium-sized lemon

  • 150g bag of mixed lettuce

  • 20g of croutons 

  • 20g of walnuts

  • 10ml of balsamic glaze


  1. Heat the olive oil in a pan on high for 2 minutes

  2. Reduce the heat to medium, then add our Tempeh Rashers to the pan

  3. Cook the Tempeh Rashers on either side for 2 minutes until browned, then set aside

  4. Finely slice the apple, as seen in the image

  5. Slice the lemon into wedges

  6. Wash and tear the lettuce into small pieces

  7. Finely slice the Tempeh Rashers to your desired size

  8. Toss all of the ingredients together, bar the lemon and balsamic glaze

  9. Drizzle the lemon over the salad, then place it on top for decoration

  10. Drizzle the balsamic glaze over the dish

  11. Serve and enjoy!
